This zesty bourbon glaze is tangy with a kick and perfect to slap on anything that you want to barbecue.
Ingredients
- 4 beef scotch fillets
Zesty bourbon glaze
- 3/4 cup orange juice
- 3/4 cup brown sugar, firmly packed
- 1/4 cup bourbon whiskey, plus 1 tablespoon extra
- 1 tablespoon orange rind, finely grated
- 1 teaspoon mustard powder
Method
- Step 1Make glaze: Stir orange juice, firmly packed brown sugar, bourbon whiskey, finely grated orange rind and mustard powder in a saucepan over low heat for 3 minutes or until sugar dissolves. Increase heat to medium. Simmer for 12-15 minutes or until glaze thickens. Stir in 1 tablespoon extra bourbon whiskey.
- Step 2Preheat a barbecue grill or chargrill on medium-high. Cook 4 beef scotch fillet steaks for 2 minutes each side or until rare. Reduce heat to medium. Brush with glaze. Cook for 2-3 minutes each side or until glossy and charred.

Notes
Also try ham; lamb or pork steaks; veal, lamb or pork cutlets; and chicken breast or thigh fillets.
Store leftover glaze in the fridge for up to 2 weeks.
Top tips: Don’t let your glaze boil or it may catch on the base of the pan.
If the glaze is too thich to brush, reheat slightly in the microwave.
Spoon half your glaze into a bowl before you start brushing. This way you only use as much as glaze as you need.
