Author Notes: Yes, this is a “Pancake”, but I often serve as a dessert or an afternoon snack. I haven’t tried this for breakfast, but you can go ahead and give it a shot.. this is very easy, and can be made with any sweetener. There are a lot of substitutions suggested, so you can work with the combination that you like. Every time I see an almost ripe banana on my counter-top, I make this pancake. The original recipe is from my mom, but I have adapted it and named it “American Style”.
The original recipe is “Banana Dosa” and uses Rice Flour, Jaggery (Indian Brown Sugar) and Coconut Milk. —madrascoffee
Makes: 8 small pancakes
Ingredients

cup Whole Wheat Flour

teaspoon Cardamon Powder

tablespoons Chopped Walnuts/Cashews/Raisins (OPTIONAL)
Directions
- Wisk all the above ingredients, and make a batter, adding more/less liquids to make it “Pouring Consistency”, perfect to make a pancake. Let it rest for 4-6 hours on your counter-top.
- In a hot ableskiver pan or griddle, add butter. When the butter sizzles, add 1/8 cup of the batter and cook until well done (turning after 2-3 minutes). Serve Hot!
