Ingredients
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil
- salt and cracked black pepper
- 400g cannellini beans, rinsed and drained
- 400g chickpeas, rinsed and drained
- 250g cherry tomatoes, halved
- 200g button mushrooms, thinly sliced
- 175g baby rocket
- crusty bread, to serve
Method
- Step 1Place the vinegar, oil, salt and cracked black pepper in a small bowl and whisk until well combined. Set aside.
- Step 2Place the whitebeans, chickpeas, tomato, mushroom and rocket in a large bowl and toss to combine. Add the dressing and gently toss until evenly coated. Transfer to serving plates and sprinkle with fetta. Serve with crusty bread.
