Serves: 2 as a main course
Ingredients

cup cooked red quinoa

1/2
cup cooked wild rice

1/2
cup cooked wheat berries

tablespoons pine nuts

large cloves garlic, minced

tablespoons sun-dried (packed in oil) tomatoes, slivered

tablespoons extra-virgin olive oil

2
tablespoons minced fresh herbs, basil and/or oregano

Salt and pepper to taste
Directions
- Saute pine nuts, sun-dried tomatoes, and garlic until pine nuts become toasted.
- Add rice, stir well, and heat until hot.
- Season with salt, pepper, and herbs.
