Eat this tuna and pasta salad for dinner tonight or pack it in a lunch-box for a healthy work lunch.
Ingredients
- 375g spaghetti
- 2 garlic cloves, peeled
- 425g can Sirena tuna in oil
- 1/2 cup stuffed green olives, halved
- 500g cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 teaspoons finely grated lemon rind
- 2 tablespoons lemon juice
- 60g baby rocket
- crusty bread, to serve
Method
- Step 1Cook pasta and garlic in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Discard garlic cloves.
- Step 2Reduce heat to low. Add undrained tuna to pan. Using a fork, flake tuna. Add pasta, olives, tomato, onion, lemon rind, lemon juice and rocket. Season with pepper. Toss to combine. Serve with bread.
