Ingredients

3-4 fresh beets (one bunch) – stems removed and cut into 1 inch cubes

extra virgin olive oil

sea salt

fresh ground pepper
Directions
- Place beets on large cookie sheet. Drizzle with enough olive oil to cover; sprinkle with salt and pepper, toss to coat completely and roast in a 425 degree oven for about 30 minutes or until fork-tender — tossing once during cooking. Serve.
