Ingredients
- 4 small green pears, peeled, quartered
- 1 tablespoon olive oil
- 4 veal cutlets
- 100g watercress sprigs, rinsed
- 100g Castello blue cheese, crumbled
Method
- Step 1Preheat oven to 190°C. Place the pear in a baking dish. Drizzle over the oil and season with salt and pepper. Toss to coat. Bake for 15 minutes.
- Step 2Turn pear. Add veal to the dish. Reduce oven to 180°C. Bake for 15 minutes. Drain off any excess liquid. Bake for 10 minutes or until pear is golden and veal is cooked.
- Step 3Divide pear, veal and watercress among serving plates. Top with blue cheese. Season with salt and pepper.
