Ingredients
- 6 desiree potatoes
- 4 (200g each) veal loin chops
- 1/4 cup olive oil
- 2 vine-ripened tomatoes, diced
- 2 tablespoons baby capers, rinsed, roughly chopped
- 1 tablespoon white wine vinegar
- 1 teaspoon sugar
- 1/2 cup fresh flat-leaf parsley leaves
Method
- Step 1Bring a large saucepan of water to the boil over medium-high heat. Add potatoes. Cook for 15 minutes or until just tender. Drain. Slice.
- Step 2Meanwhile, season chops with salt and pepper. Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Cook chops for 3 minutes each side for medium or until cooked to your liking. Remove to a plate. Cover with foil.
- Step 3Combine tomato, capers, remaining oil, vinegar and sugar in a bowl. Season with salt and pepper. Add parsley and toss to combine. Divide potato between plates. Top with veal. Serve with salsa
