Burritos make a fun family meal, and we’ve given this classic Tex-Mex dish a tasty twist with Italian-style seasoning and tangy Greek yoghurt.
Forget cutlery – roll-your-own burritos are just the thing for Thursday night.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 small brown onion, finely chopped
- 500g beef mince
- 1 1/4 teaspoons Tuscan seasoning
- 1/2 large avocado, stone removed, peeled
- 70g (1/4 cup) Greek-style natural yoghurt
- 8 flour tortillas
- 1/2 cos lettuce, leaves shredded
- 200g tomatoes, coarsely chopped
Method
- Step 1Heat the oil in a large non-stick frying pan over medium-high heat. Add the onion and cook, stirring, for 3 minutes or until soft. Add the mince and seasoning. Increase heat to high. Cook, stirring with a wooden spoon to break up any lumps, for 6 minutes or until the mince changes colour.
- Step 2Mash the avocado in a small bowl. Stir in the yoghurt. Warm the tortillas following packet directions.
- Step 3Transfer the mince mixture to a serving bowl. Serve with avocado mixture, tortillas, lettuce and tomato.

Notes
Make it ahead: Make the mince mixture up to 3 days ahead. Store in an airtight container in the fridge. Reheat just before serving.
With a twist:
Classic Mexican: beef burritos Replace the Tuscan seasoning with Mexican seasoning. Replace the yoghurt with sour cream.
