For a twist on a family favourite, try these delicious Turkey sausage rolls.
Ingredients
- 1 tablespoon olive oil
- 200g cup mushrooms, diced
- 1 cup wholemeal fresh breadcrumbs
- 4 green onions, thinly sliced
- 500g turkey mince
- 2 tablespoons fresh thyme leaves
- 1/4 cup tomato paste
- 2 sheets frozen ready-rolled reduced-fat puff pastry, thawed
- 1 egg, lightly beaten
- 2 teaspoons sesame seeds
- Tomato sauce, to serve
- Salad leaves, to serve
Method
- Step 1Preheat oven to 220C/200C fan-forced. Line a large baking tray with baking paper.
- Step 2Heat oil in a frying pan over medium heat. Cook mushroom, stirring, for 3 to 4 minutes or until tender. Cool slightly. Drain.
- Step 3Combine mushroom, breadcrumbs, onion, mince, thyme and tomato paste in a bowl. Season with salt and pepper.
- Step 4Cut pastry sheets in half. Shape one-quarter mince mixture into a 24cm x 3cm sausage. Place along edge of 1 pastry sheet half. Brush opposite edge with egg. Roll up pastry to enclose filling. Cut in half. Place, seam-side down, on prepared tray. Repeat with remaining mince mixture and pastry.
- Step 5Brush sausage roll tops with egg. Sprinkle with sesame seeds. Bake for 20 minutes or until golden and puffed. Serve with tomato sauce and salad leaves.
