Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 large red onions, halved, thinly sliced
- 1 tablespoon brown sugar
- 60g baby spinach leaves, shredded
- 250g (2 cups) roast turkey, chopped
- 1/2 cup freshly grated parmesan cheese
- 6 eggs
- 1/2 cup milk
- garden salad, to serve
Method
- Step 1Melt butter in a frying pan over medium heat. Add oil, onions and sugar. Cook, stirring occasionally, for 15 to 20 minutes, or until soft and golden.
- Step 2Preheat oven to 180°C. Lightly grease a 12 x 1/3-cup capacity muffin pan.
- Step 3Place half the caramelised onions into a bowl. Add spinach, turkey and parmesan. Mix well. Divide turkey mixture evenly between muffin holes. Combine eggs, milk, and salt and pepper in a jug. Whisk with a fork. Carefully pour egg mixture over turkey mixture, to three-quarters fill muffin holes.
- Step 4Bake for 20 minutes, or until frittatas are puffed and golden. Serve with remaining onions and garden salad.
