Revitalise leftover turkey in this fresh and fabulous summer salad.
Ingredients
- 1 bunch fresh rocket, trimmed
- 3 truss tomatoes, cut into wedges
- 2 mangoes, cheeks removed, peeled, thinly sliced
- 320g cooked turkey, sliced
- 2/3 cup (90g) walnut pieces
Dressing
- 2 tablespoons cider vinegar
- 2 tablespoons olive oil
- Pinch sugar
- Salt & freshly ground pepper
Method
- Step 1To make the dressing, whisk together the vinegar, olive oil and sugar. Season well with salt and pepper.
- Step 2Arrange the rocket leaves, tomatoes, mangoes and turkey among serving plates. Scatter over the walnuts and drizzle with the dressing.
