Make it easy on yourself with this six-ingredient pasta main in under 30 minutes!
Ingredients
- 375g penne rigate
- 425g can tuna in oil
- 1 garlic clove, crushed
- 2 teaspoons finely grated lemon rind
- 1/4 cup lemon juice
- 2 tablespoons drained capers
- 1 cup fresh flat-leaf parsley leaves
Method
- Step 1Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain, reserving 1/4 cup cooking liquid.
- Step 2Return pasta to pan. Drain tuna, reserving 2 tablespoons oil. Using a fork, flake tuna. Add garlic, lemon rind, lemon juice, capers, parsley, tuna, reserved oil and reserved liquid to pasta. Toss to combine. Season with salt and pepper. Serve.
