Quick and easy tuna pasta is given a colourful boost with the addition of cherry tomatoes.
Ingredients
- 500g spaghetti
- 2 tablespoons olive oil
- 1 cup fresh white breadcrumbs
- 1/3 cup flat-leaf parsley leaves, chopped
- 425g can Greenseas Tuna in Springwater, drained, flaked
- 200g cherry tomatoes, quartered
- 1/2 cup grated parmesan cheese
- 1/3 cup lemon juice
Method
- Step 1Cook pasta in a saucepan of boiling salted water, following packet directions, until just tender.
- Step 2Meanwhile, heat oil in a frying pan over medium-low heat. Add breadcrumbs. Cook for 10 minutes, stirring occasionally, or until golden and crisp. Remove from heat. Transfer to a bowl. Add parsley. Toss until well combined.
- Step 3Drain pasta. Return to saucepan. Add tuna, tomatoes, parmesan and lemon juice. Toss over low heat for 3 minutes or until just heated through. Spoon into serving bowls. Sprinkle with breadcrumb mixture. Season with salt and pepper. Serve.

Notes
