Need a hearty dinner in a flash? This speedy low-fat pasta is quick, easy and delicious.
Ingredients
- 1 x 200g punnet grape tomatoes, halved
- 6 (about 250g) yellow squash, quartered
- 2 garlic cloves, crushed
- 3 teaspoons balsamic vinegar
- Olive oil spray
- 1 x 625g pkt spinach and ricotta tortellini
- 2 bacon rashers, rind removed, thinly sliced
- 1/2 cup fresh continental parsley leaves
- Shaved parmesan, to serve
Method
- Step 1Preheat oven to 200°C. Place the tomato, squash, garlic and vinegar in a large bowl and stir to combine. Season with salt and pepper. Place the tomato mixture in a non-stick roasting pan. Lightly spray with olive oil spray. Roast in oven for 20 minutes or until tender.
- Step 2Meanwhile, cook the tortellini in a large saucepan of boiling water following packet directions or until al dente. Drain and return to the pan.
- Step 3Heat a small non-stick frying pan over medium heat. Add the bacon and cook, stirring, for 5 minutes or until crisp and brown. Transfer to a plate lined with paper towel to drain.
- Step 4Add the tomato mixture, bacon and parsley to the tortellini and toss until well combined. Divide the tortellini mixture among serving bowls and top with parmesan. Season with salt and pepper to serve.

Notes
Variations:
1) Roasted zucchini and tomato agnolotti: Replace the tortellini with 1 x 625g pkt spinach and ricotta agnolotti. Replace the squash with 2 zucchini, ends trimmed, thickly sliced. Replace the parsley with 1/2 cup fresh basil leaves. Sprinkle over 1 x 75g pkt toasted pine nuts to serve.
2) Beef tortellini with salami and roasted tomatoes: Replace the grape tomatoes with golden grape tomatoes. Replace the tortellini with 1 x 625g pkt beef tortellini. Replace the bacon with 10 pieces mild salami, thinly sliced.
3) Fettuccine with roasted vegetables: Add 1 large red onion, cut into thin wedges, and 2 zucchini, ends trimmed, thickly sliced, with the grape tomato in step 1. Replace the tortellini with 2 x 375g pkt fresh fettuccine. Replace the parsley with 1/3 cup fresh lemon thyme leaves. Tip: Save time and cook the bacon in the microwave. Place the bacon between two sheets of paper towel on a microwave-safe plate. Cook on High/800watts/100% for 2-3 minutes or until browned – it will crisp as it cools. Prosciutto can also be cooked this way.
