This tomato and olive salad is a quick and easy side to any summer dish.
Ingredients
- 6 ripe tomatoes, sliced
- 1 small red onion, finely sliced
- 2 tablespoon chopped parsley
- 1/4 cup pitted green olives, halved
- 2 tablespoon Coles brand Italian red wine vinegar
- 2 tablespoon extra virgin olive oil
Method
- Step 1Arrange tomato slices on a serving platter and top with onion. Scatter parsley and olives over.
- Step 2Drizzle vinegar and oil over salad, and season with salt and freshly ground black pepper.
