Add this sensational side to your Sunday roast menu.
Ingredients
- 1.5kg small lady christl potatoes, unpeeled
- 3 green onions, chopped
- 1 tablespoon olive oil
- 3 teaspoons chopped fresh tarragon
- 2 tablespoons white balsamic vinegar
Method
- Step 1Preheat oven to 180°C/160°C fan-forced. Place potatoes in a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium-low. Simmer for 8 to 10 minutes or until just tender. Drain.
- Step 2Transfer potatoes to a baking dish. Sprinkle with onion. Drizzle with oil. Season with salt and pepper. Bake, turning halfway during cooking, for 30 to 40 minutes or until golden.
- Step 3Sprinkle potatoes with tarragon. Drizzle with vinegar. Toss to combine. Serve.
