Feed your family with Curtis Stone’s tandoori spiced drumsticks with raita and rice.
Ingredients
- 1/2 cup Coles Brand Greek Style Yoghurt
- 1/2 Lebanese cucumber
- 1/4 teaspoon Coles Brand Ground Cumin
- 1/2 tablespoon finely chopped fresh coriander
- 3/4 cup Coles Brand White Long Grain Rice
- 1 1/2 cups water
- 8 Coles Brand RSPCA Approved Chicken Drumsticks
- 1/4 cup Sharwood's Tandoori Paste
- 2 tablespoons olive oil
- 1 small brown onion, thickly sliced
- 5 cloves garlic, finely chopped
- 400g can Coles Brand Italian Diced Tomatoes
- 1 cup water
- 100g baby spinach
Method
- Step 1Score drumsticks a couple of times. Combine in a large bowl with tandoori paste, rubbing all over the chicken. Cover and refrigerate for 30 mins.
- Step 2Place the yoghurt into a small bowl. Remove the end from the cucumber. Finely grate into the yoghurt. Add the cumin and coriander and mix well. Season to taste with salt and pepper. Cover and refrigerate while chicken is cooking.
- Step 3Combine 1 1/2 tablespoons oil with the chicken. Heat a large deep heavy-based frypan or large shallow saucepan over medium-high heat. Add the chicken and brown on all sides, about 3 mins.
- Step 4Add the remaining oil and onion and cook for 2 mins, until softened. Stir in the garlic and cook for 2 mins. Add tomatoes and water, cover and bring to the boil. Reduce heat to low, and cook for 15 mins. Remove lid, season and simmer gently for about 10 mins until sauce thickens slightly and chicken is tender. Stir in spinach and cook for 1-2 mins, or until just wilted.
- Step 5While the chicken is cooking, combine the rice, water and a pinch of salt in a medium sized heavy-based saucepan. Bring to the boil and simmer, covered, over low heat for 15-20 mins, or until the water is absorbed and the rice is cooked.
- Step 6Serve with the chicken and raita.
