Ingredients
- 2 teaspoons vegetable oil
- 500g stir-fry pork strips, heart smart
- 1/4 Naturally Sweet Pineapple, peeled, cored, cut into wedges
- 1 red capsicum, deseeded, sliced
- 275g pkt sweet and sour stir-fry sauce
- 1/2 cup fresh coriander leaves
- 2 x 100g pkts Chang's fried noodles
- Lime wedges, to serve
Method
- Step 1Heat the oil in a frying pan over a high heat. In batches, cook the pork for 3-4 minutes or until browned. Transfer to a plate.
- Step 2Add the pineapple and capsicum to the pan and cook, tossing for 2 minutes.
- Step 3Reduce the heat and stir in sauce and simmer for 5 minutes. Stir in the coriander.
- Step 4Divide the noodles among serving bowls. Top with sweet and sour pork and serve with lime wedges.
