Enjoy hot summer nights with these Mexican-inspired sweet chilli pork wraps using only six ingredients.
Ingredients
- 1/3 cup sweet chilli sauce
- 4 (500g total) pork sirloin steaks
- 1 large avocado, peeled, diced
- 1/2 cup fresh coriander leaves, roughly chopped
- 1 tablespoon extra virgin olive oil
- 2 bunches asparagus, trimmed
- Olive oil cooking spray
- 4 white bread wraps
Method
- Step 1Place 1/4 cup sweet chilli sauce into a glass or ceramic shallow dish. Add pork. Turn to coat. Set aside for 10 minutes.
- Step 2Meanwhile, place avocado, coriander, extra virgin olive oil and remaining sweet chilli sauce in a bowl. Season with salt and pepper. Toss to combine. Set aside.
- Step 3Preheat a greased barbecue plate on medium. Spray asparagus with oil. Barbecue pork, turning often, for 5 to 6 minutes or until just cooked through. Transfer to a plate. Cover with foil. Rest for 5 minutes. Add asparagus to barbecue plate. Cook, turning often, for 3 to 5 minutes or until just tender.
- Step 4Slice pork. Place wraps on plates, top with asparagus, pork and avocado salsa. Serve.
