Ingredients
- 100g Naturally Yours almond and cashews stir-fry mix
- 5 slices short-cut rindless bacon, chopped
- 1 tablespoon olive oil
- 1 garlic clove, finely sliced
- 1/2 (about 950g) wombok, finely shredded
- Freshly ground pepper
Method
- Step 1Place the almonds and cashews in a wok or large deep frypan over a medium-low heat. Cook, tossing often, for 3-4 minutes or until lightly toasted and golden. Transfer to a plate and set aside.
- Step 2Increase the heat to medium-high. Add the chopped bacon and cook, stirring often, for 4 minutes or until crisp and golden. Remove and set aside.
- Step 3Heat the oil in the pan over a medium heat. Add the sliced garlic and cook, tossing, for 30 seconds until aromatic. Add the wombok and cook, tossing, for 2 minutes, until just wilted. Season to taste with pepper and serve as a side dish or on its own.
Notes
This stir-fried wombok goes very well with chicken, beef or fish. Almonds: A delicate and very versatile nut which strengthens the cardiovascular system and also helps protect against cancer. Cashews: A rich buttery flavoured nut which aids haemoglobin production and helps keep skin, hair, nerves, glands and cells healthy. Bacon: Bacon comes from the side of a pig. The German word for bacon is speck while the French word is lard – rendered down pork fat.
