Recreate the fresh flavours of Thai cuisine in this easy green vegetable fried rice dish.
Ingredients
- 300g jasmine rice
- 2 tablespoons sunflower oil
- 1 tablespoon good-quality Thai green curry paste
- 6 spring onions, thinly sliced on an angle
- 2 garlic cloves, crushed
- 100g snake beans (see note) or green beans, cut into 4cm lengths
- 1 bunch thin asparagus, trimmed, cut into 4cm lengths
- 1 zucchini, cut into matchsticks
- 1 tablespoon fish sauce
- 1 cup Thai basil leaves (see note)
Method
- Step 1Cook rice in boiling salted water over medium heat for 10 minutes or until just cooked. Cool.
- Step 2Heat oil in a wok over medium-high heat. Add curry paste and stir-fry for 1 minute until fragrant. Add onion, garlic, beans, asparagus and zucchini and stir-fry for 1-2 minutes until tender. Stir in rice, fish sauce and basil until heated through.
