Ingredients
- 1 garlic clove, crushed
- 1 teaspoon sesame oil
- 400g lean beef fillet steak, thinly sliced diagonally
- 450g fresh rice noodles (see note)
- olive oil cooking spray
- 1 bunch broccolini, trimmed, cut into bite-sized pieces (including stems)
- 4 green onions, cut into 3cm lengths
- 1/4 cup thai basil
- 1/4 cup mild chilli sauce
- 1 tablespoon reduced-salt soy sauce
- 150g beansprouts, trimmed
Method
- Step 1Combine garlic and sesame oil in a ceramic dish. Add beef. Toss to coat. Cover. Refrigerate for 10 minutes. Follow packet directions to separate noodles.
- Step 2Heat a wok over high heat until hot. Spray lightly with oil. Add one-quarter of the beef. Stir-fry for 1 minute or until just browned. Remove to a plate. Repeat 3 times with remaining beef and oil if necessary.
- Step 3Spray wok with oil again. Add broccolini and onions. Stir-fry for 2 minutes. Add noodles, chilli sauce and soy sauce. Stir-fry for 2 minutes or until noodles are warmed through. Return beef to wok. Stir-fry for 1 to 2 minutes or until heated through. Add beansprouts. Toss to combine. Serve.
