Sweet pear and orange skewers are marinated in tangy marmalade and made special with a drizzle of hazelnut cream.
Ingredients
- 1 cup thickened cream
- 2 tablespoons icing sugar mixture
- 1/2 cup dry-roasted hazelnuts, chopped
- 1/2 cup orange marmalade
- 3 pears, peeled, cored, cut into wedges
- 2 oranges, peeled, cut into wedges
- olive oil cooking spray
Method
- Step 1Using an electric mixer, beat cream and icing sugar until soft peaks form. Fold in hazelnuts. Cover and refrigerate.
- Step 2Place marmalade in a microwave-safe bowl. Microwave on medium-high (75%) for 30 seconds or until melted.
- Step 3Thread pear and orange onto 8 skewers. Brush with marmalade. Preheat a barbecue plate or chargrill on medium heat. Spray with oil. Cook, turning, for 2 to 3 minutes or until fruit caramelises. Serve with hazelnut cream.
