Deck the halls for this modern, Christmas day side with no trimming spared!
Ingredients
- 2 bunches broccolini, trimmed
- 3 bunches asparagus, trimmed
- 150g green beans, trimmed
- 150g snow peas, trimmed
- fresh mint leaves, to serve
Tarragon mustard dressing
- 2 teaspoons dijon mustard
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 1/2 tablespoons chopped fresh tarragon leaves
Method
- Step 1Make dressing Whisk mustard, lemon juice and oil together in a bowl. Season with salt and pepper. Stir in tarragon.
- Step 2Bring a large saucepan of water to the boil over high heat. Add broccolini, asparagus and beans. Cook for 2 to 3 minutes or until almost tender. Add snow peas. Cook for 1 minute or until vegetables are tender. Drain.
- Step 3Arrange vegetables on a platter. Drizzle with dressing. Sprinkle with mint. Serve.
