Ingredients
- 2 tablespoons olive oil
- 8 beef minute steaks
- 1 red onion, chopped
- 4 tomatoes, chopped
- 1/4 cup dry white wine
- 1 tablespoon balsamic vinegar
- 1/3 cup pitted kalamata olives, halved
- 2 tablespoons flat-leaf parsley, chopped
- 1 tablespoon basil, chopped
- Hot chips, to serve
- Steamed beans, to serve
Method
- Step 1Heat half the oil in a heavy-based frying pan over medium-high heat. Add steaks. Cook, in batches, for 1 minute each side. Transfer to a plate. Cover with foil.
- Step 2Heat remaining oil in frying pan. Reduce heat to medium. Add onion. Cook for 3 minutes, or until soft. Add tomatoes and wine. Simmer, stirring, for 3 to 4 minutes, or until tomatoes are soft.
- Step 3Stir in vinegar, olives, herbs, and salt and pepper. Place steaks onto plates. Top with sauce. Serve with chips and beans
