Just a few minutes on the barbecue is all it takes to make these tasty sausage and sweet potato burgers.
Ingredients
- 500g orange sweet potato, peeled, thinly sliced
- 2 tablespoons olive oil
- 500g spicy thick beef sausages
- 1 loaf Turkish bread, cut into 4 pieces, halved crossways
- 125g tub hommus
- 60g rocket leaves
Method
- Step 1Combine sweet potato and 1 tablespoon oil in a bowl. Season with salt and pepper.
- Step 2Heat a barbecue plate or chargrill over medium-high heat. Cook sausages, in batches, turning occasionally, for 10 to 15 minutes or until cooked through. Remove to a plate. Cover to keep warm. Cook sweet potato for 1 to 2 minutes each side or until tender. Remove to a plate. Cover to keep warm.
- Step 3Brush bread with remaining oil. Cook for 1 minute each side or until toasted.
- Step 4Slice sausages. Top bread bases with hommus, sweet potato, sausages, rocket and bread tops. Serve.
