Warm up from the inside out with this easy one-pan bake! With a sticky honey, zesty lime and punchy ginger dressing (with a kick of chilli) adding rich Asian-inspired flavours to no-fuss chicken drumsticks, everyone will be satisfied with this weeknight wonder.
Ingredients
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 lime, thinly sliced
- 4cm piece fresh ginger, peeled, cut into matchsticks
- 1 long fresh red chilli, thinly sliced diagonally
- 2 garlic cloves, crushed
- 1 teaspoon Chinese five spice
- 8 small chicken drumsticks
- 1 (about 700g) baby red cabbage, cut into 8 wedges
- Thinly sliced green shallot, to serve
- Steamed rice, to serve
Method
- Step 1Combine soy sauce, honey, lime, ginger, chilli, garlic and Chinese five spice in a large bowl. Add chicken. Turn to coat. Cover with plastic wrap and place in the fridge for at least 2 hours, or up to 8 hours, to marinate.
- Step 2Preheat oven to 200C/180C fan forced. Heat a large flameproof roasting pan over medium-high heat. Drain chicken from marinade, reserving marinade. Spray chicken well with olive oil. Cook, turning, for 2 minutes or until browned.
- Step 3Add cabbage. Pour over reserved marinade. Roast for 35 minutes or until chicken is cooked through. Sprinkle with shallot. Serve with rice.

Notes
For an easy way to make this bake gluten-free, swap the soy sauce for 2 1/2 tablespoons tamari.
