Ingredients

1 tablespoon peanut oil

1 teaspoon sesame oil

4cm piece fresh ginger, peeled, cut into thin matchsticks

2 garlic cloves, crushed

600g chicken stir-fry strips

250g green beans, trimmed, cut into 4cm lengths

2 tablespoons salt-reduced soy sauce

1 long red chilli, deseeded, thinly sliced

2 x 250g packets steamed basmati rice
Method

Step 1Heat peanut oil and sesame oil in a large wok over high heat. Add ginger, garlic, chicken and beans. Stir-fry for 4 to 5 minutes or until chicken is cooked through. Add soy sauce and chilli. Stir-fry for 2 to 3 minutes or until beans are tender.

Step 2Cook rice following packet directions. Divide rice between bowls. Top with chicken mixture. Serve.
