Ingredients
- 1 tablespoon peanut oil
- 1 teaspoon sesame oil
- 4cm piece fresh ginger, peeled, cut into thin matchsticks
- 2 garlic cloves, crushed
- 600g chicken stir-fry strips
- 250g green beans, trimmed, cut into 4cm lengths
- 2 tablespoons salt-reduced soy sauce
- 1 long red chilli, deseeded, thinly sliced
- 2 x 250g packets steamed basmati rice
Method
- Step 1Heat peanut oil and sesame oil in a large wok over high heat. Add ginger, garlic, chicken and beans. Stir-fry for 4 to 5 minutes or until chicken is cooked through. Add soy sauce and chilli. Stir-fry for 2 to 3 minutes or until beans are tender.
- Step 2Cook rice following packet directions. Divide rice between bowls. Top with chicken mixture. Serve.
