Experience this crowd-pleasing main that will entertain your family and friends all summer long.
Ingredients
- 1 long red chilli, seeds removed, chopped
- 1 garlic clove, chopped
- 5cm piece ginger, grated
- 2 x 200g chicken breast fillets, chopped
- 1 egg yolk
- 2 teaspoons curry powder
- 1 green apple, cored, quartered
- Juice of 1/2 lemon
- 2-3 tablespoons sunflower oil
- 4 hamburger buns, split, toasted
- Whole-egg mayonnaise, to serve
- Mango chutney, to serve
- Micro herbs or coriander sprigs, to serve
- French fries (optional), to serve
Method
- Step 1Place chilli, garlic and ginger in a food processor and pulse to combine. Add the chicken, egg yolk, curry powder and some salt and pepper, then pulse until it forms a coarse mixture. Form into 4 patties. Chill for 30 minutes.
- Step 2Meanwhile, slice the apple very thinly (a mandoline is ideal) and toss with the lemon juice in a bowl. Set aside.
- Step 3Preheat a chargrill or barbecue to medium-high. Brush the burger patties with oil, then grill, turning once, for 5-6 minutes or until cooked through.
- Step 4Fill toasted buns with mayonnaise, burger patties, chutney, sliced apple and herbs. Serve with French fries, if desired.
