Spicy chicken and avocado sandwichPrint Recipe
- 1 Coles Bakery Stone Baked White Sourdough Baguette
- 1/2 x 275g jar aioli
- 1/3 cup chopped coriander
- 4-5 iceberg lettuce leaves, torn
- 1/2 teaspoon dried chilli flakes
- 350g shredded Coles Hot Roast Chicken
- 1 avocado, sliced
- 3 roma tomatoes, sliced
- Step 1Split baguette (don’t cut all the way through). Remove 2 cups of bread from centre (see Note).
- Step 2Combine the aioli, coriander and chilli in a small bowl. Spread inside of baguette with aioli mixture. Fill with chicken, avocado, tomato and salad leaves. Tie with kitchen string and cut with a serrated knife. Wrap in foil or plastic wrap and chill until ready to pack.
Handy tip: Process the bread to make breadcrumbs and freeze in a sealable plastic bag.
