Sweet cranberry mayonnaise adds a sweet tang to these spiced turkey subs.
Ingredients
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 500g turkey breast steaks, cut into thirds
- 2 teaspoons vegetable oil
- 1/3 cup light whole-egg mayonnaise
- 1 tablespoon cranberry sauce
- 4 long bread rolls
- 1/2 x 500g bag crunchy salad mix
- 1 avocado, sliced
- Oven-baked sweet potato fries, to serve
Method
- Step 1Combine paprika, cumin and ginger in a small bowl. Season with salt and pepper. Place turkey steaks on a plate. Sprinkle with spice mixture. Rub to coat.
- Step 2Heat oil in a frying pan on medium heat. Add turkey. Cook for 3 minutes each side or until browned and cooked through.
- Step 3Meanwhile, combine mayonnaise and cranberry sauce in a bowl. Split bread rolls in half without cutting all the way through. Fill each roll with salad mix, turkey, avocado and cranberry mayonnaise. Serve with remaining salad mix and sweet potato fries.

Make step 1. Place turkey in a snap-lock bag. Refrigerate for up to 1 day before you continue with the rest of the recipe.
