This sweet apple salad is a perfect compliment to the honey mustard pork.
Ingredients

1 tablespoon honey

1/2 teaspoon mustard powder

1/2 teaspoon ground ginger

1 teaspoon ground coriander

300g piece pork fillet
Apple & mustard salad

1 small Granny Smith apple
-
1 tablespoon lemon juice
-
2 witlof, thinly sliced

1/4 cup roughly chopped flat-leaf parsley leaves

1 teaspoon wholegrain mustard

2 tablespoons whole-egg mayonnaise
Method

Step 1Preheat the oven to 220C. Line a baking tray with baking paper.

Step 2For the apple and mustard salad, core the apple and thinly slice. Cut the slices into matchsticks and combine in a bowl with the lemon juice. Top with the witlof and chopped parsley, then cover and refrigerate until required.

Step 3Combine the honey, mustard powder, ginger and coriander in a small bowl with 2 teaspoons sea salt. Place the pork fillet on prepared tray, spread mixture over top of the pork and roast for 16-18 minutes or until browned all over. Remove from the oven, cover loosely with foil and rest for 10 minutes.

Step 4Meanwhile, add the wholegrain mustard and mayonnaise to the salad and toss until well combined, season to taste with sea salt and freshly ground black pepper.

Step 5Divide the salad between serving plates and top with slices of pork.
