It may sound fancy but this pasta main is budget-friendly and quick to prepare.
Ingredients
- 200g spaghetti
- 1 garlic clove, crushed
- 1 bunch watercress, leaves picked
- 50g grated parmesan
- Zest and juice of 1 lime
- 2 tablespoons olive oil
- 50g toasted pine nuts, plus extra to garnish (see Notes)
- 200g fresh crab, or canned crab meat
Method
- Step 1Cook pasta in a large pan of boiling salted water according to packet instructions.
- Step 2Meanwhile, make pesto. Place remaining ingredients (except crab) in a food processor with 1/3 cup (80ml) water and plenty of seasoning. Whiz to a smooth paste.
- Step 3Drain pasta and return to pan. Add pesto and stir to coat well. Gently flake in the crab and stir through. Serve immediately scattered with the extra pine nuts.
