This quick and easy pasta dish showcases the flavours of prawns, feta cheese and lemon.
Ingredients
- 1/3 cup (80ml) extra virgin olive oil
- 4 cloves garlic, thinly sliced
- 500g vine ripened tomatoes, roughly chopped
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sugar
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh oregano leaves
- Sea salt and freshly ground black pepper to season
- 500g cooked cocktail prawns
- 375g thin spaghetti
- 100g Clover Creek Tasmanian feta, crumbled
- Finely grated zest of 1 lemon
Method
- Step 1Place half the oil and garlic in a large frying pan and cook gently for a few minutes until garlic softens. Add tomatoes, paprika, sugar, half the thyme, oregano, salt and pepper; cook over medium heat for about 5 minutes, or until tomatoes have softened slightly. Add prawns and gently cook until just heated through.
- Step 2Meanwhile, cook pasta in a large pan of salted, boiling water until just tender. Add drained pasta to sauce and toss until well combined.
- Step 3Divide pasta between four serving bowls. Sprinkle fetta, lemon zest and remaining thyme leaves over each bowl, and drizzle with remaining olive oil. Serve immediately.
