It might sound and look fancy, but this seafood pasta dish will take you under half an hour to get onto the table.
Ingredients
- 350g spaghetti
- 20g butter
- 2 tomatoes, quartered, deseeded, finely chopped
- 2 tablespoons fresh lemon juice
- 2 teaspoons grated lemon rind
- 125ml (1/2 cup) Massel chicken style liquid stock
- 300ml pouring cream
- 1 x 140g Crab Meat
- 1/3 cup fresh basil leaves, torn
Method
- Step 1Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain and return to the pan.
- Step 2Meanwhile, melt the butter in a large frying pan over medium heat. Add the tomato and cook, stirring, for 2 minutes or until the tomato is soft. Add the lemon juice, lemon rind, stock and cream. Cook, stirring, for 5 minutes or until the sauce thickens slightly. Add the crab meat and half the basil to the sauce and cook for 2 minutes or until the crab meat is heated through.
- Step 3Add the sauce to the pasta and toss to combine. Season with salt and pepper. Divide among serving bowls. Top with the remaining basil to serve.

Notes
Shopping tip: You’ll find the crab meat in the chilled seafood section at Woolworths, near the smoked salmon.
Swap it: For a different flavour, swap the fresh crab meat for 150g smoked salmon, cut into thin strips.
