These tasty pizza pockets are stuffed with sharp goat’s cheese and hot sopressa.
Ingredients
- 185ml (3/4 cup) warm water
- 2 teaspoons (7g/1 sachet) dried yeast
- 2 teaspoons caster sugar
- 375g (2 1/2 cups) plain flour
- 1 teaspoon sea salt flakes
- 80ml (1/3 cup) olive oil
- 250g punnet cherry tomatoes, halved
- 100g soft goat's cheese, crumbled
- 8 slices (about 160g) hot sopressa salami (see note), coarsely chopped
- 80g (2/3 cup) coarsely grated mozzarella
- 40g baby rocket leaves
- 1/2 cup fresh basil leaves
- 1 tablespoon fresh lemon juice
Method
- Step 1Combine water, yeast and sugar in a bowl. Set aside for 5 minutes or until frothy. Combine flour and salt in a large bowl. Make a well in the centre. Add the yeast mixture and half the oil. Use a round-bladed knife in a cutting motion to mix until combined. Use your hands to bring the dough together.
- Step 2Brush a separate bowl with a little oil. Turn dough onto a lightly floured surface. Knead for 10 minutes or until smooth and elastic. Place in bowl. Turn to coat in oil. Cover and set aside in a warm, draught-free place for 30 minutes or until the dough doubles in size.
- Step 3Preheat oven to 220°C. Line a baking tray with non-stick baking paper. Place the tomato, cut-side up, on the tray. Drizzle with 1 tablespoon of oil. Roast, turning halfway, for 15 minutes or until soft. Increase oven temperature to 250°C.
- Step 4Turn dough onto a lightly floured surface. Divide into 4 pieces. Place one piece of the dough on a greased baking tray. Roll out to a 15cm disc. Arrange one-quarter of tomato, goat’s cheese, sopressa and mozzarella over half the disc. Fold to enclose filling (do not seal). Repeat with remaining dough, tomato, sopressa and mozzarella. Brush the calzones with remaining oil. Bake for 15 minutes or until golden and cooked through. Combine rocket, basil and lemon juice in a bowl. Open the calzones slightly. Fill with rocket mixture.
