Ingredients

  • 1 tablespoon peanut oil
  • 1 clove garlic, chopped
  • 1 teaspoon finely grated ginger
  • 1 bunch asparagus, trimmed and cut into 5cm lengths
  • 1 large zucchini, sliced diagonally
  • 75g snow peas, trimmed
  • 1 bunch baby bok choy, roughly chopped
  • 250g packet firm tofu, drained and sliced
  • 2 tablespoons oyster sauce steamed rice, to serve

Instructions

  • Step 1
    Heat the oil in a wok or a large non stick frying pan over high heat. Add the asparagus and zucchini and cook for 5 minutes until tender. Add the garlic, ginger, snow peas and bok choy and cook for a further 2 minutes or until bok choy is wilted. Stir through the tofu and oyster sauce and cook for another minute or until the tofu is warmed through. Serve with steamed rice.
