Snow pea, asparagus and tofu stir fry

- 1 tablespoon peanut oil
- 1 clove garlic, chopped
- 1 teaspoon finely grated ginger
- 1 bunch asparagus, trimmed and cut into 5cm lengths
- 1 large zucchini, sliced diagonally
- 75g snow peas, trimmed
- 1 bunch baby bok choy, roughly chopped
- 250g packet firm tofu, drained and sliced
- 2 tablespoons oyster sauce steamed rice, to serve
Instructions
- Step 1Heat the oil in a wok or a large non stick frying pan over high heat. Add the asparagus and zucchini and cook for 5 minutes until tender. Add the garlic, ginger, snow peas and bok choy and cook for a further 2 minutes or until bok choy is wilted. Stir through the tofu and oyster sauce and cook for another minute or until the tofu is warmed through. Serve with steamed rice.
