Ingredients
- 375g dried spiral pasta
- 2 bunches (360g) asparagus spears, trimmed, cut into 5cm lengths
- 2 teaspoons finely grated lemon rind
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- 200g sliced smoked salmon, chopped (see variation)
- 3/4 cup ricotta cheese, crumbled
- 2 tablespoons fresh dill sprigs, chopped
- 1/4 cup chopped walnuts
Method
- Step 1Cook pasta in a large saucepan of boiling, salted water until tender, adding asparagus for the last 2 minutes of cooking. Drain. Return to pan over low heat.
- Step 2Add lemon rind, lemon juice, oil, salmon, ricotta, dill and walnuts. Season with salt and pepper. Toss to coat. Serve.

Notes
You could use a 415g can red salmon, drained and flaked, instead of the smoked salmon.
