Ingredients

375g dried spiral pasta

2 bunches (360g) asparagus spears, trimmed, cut into 5cm lengths

2 teaspoons finely grated lemon rind

1/4 cup lemon juice

1 tablespoon olive oil

200g sliced smoked salmon, chopped (see variation)

3/4 cup ricotta cheese, crumbled

2 tablespoons fresh dill sprigs, chopped

1/4 cup chopped walnuts
Method

Step 1Cook pasta in a large saucepan of boiling, salted water until tender, adding asparagus for the last 2 minutes of cooking. Drain. Return to pan over low heat.

Step 2Add lemon rind, lemon juice, oil, salmon, ricotta, dill and walnuts. Season with salt and pepper. Toss to coat. Serve.

Notes
You could use a 415g can red salmon, drained and flaked, instead of the smoked salmon.
