Liven up ordinary meals with this smoked salmon and creamy avocado pasta recipe.
Ingredients
- 375g linguine
- 100g smoked salmon, chopped
- 1 avocado, roughly chopped
- 2 tablespoons chopped fresh dill
- 1/2 cup pure cream
- 2 tablespoons grated parmesan cheese
- 1 tablespoon lemon juice
- Extra chopped fresh dill, to serve
Method
- Step 1Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Return to pan.
- Step 2Add salmon, avocado, dill, cream and parmesan to pasta. Cook, tossing, over low heat for 1 to 2 minutes or until heated through. Remove from heat. Stir through lemon juice. Season with salt and pepper. Divide between bowls. Serve topped with extra chopped dill.
