This salad has everything going for it – healthy, tasty and low kilojoule too.
Ingredients
- 300g penne pasta
- 300g frozen broad beans
- 150g smoked ocean trout, thinly sliced
- 1 medium red onion, thinly sliced
- 2 tablespoons chopped fresh dill
- 2 teaspoons finely grated lemon rind
- 2 tablespoons lemon juice
Method
- Step 1Cook pasta in a large saucepan of boiling, salted water, following packet directions, until just tender. Drain.
- Step 2Cook beans in a small saucepan of boiling water for 2 minutes or until just tender. Drain. Rinse under cold water. Remove and discard outer skins.
- Step 3Place pasta, beans, trout, onion, dill, lemon rind and lemon juice in a bowl. Toss to combine. Serve.
