Ingredients
- 1 iceberg lettuce, finely shredded
- 3 smoked chicken breast fillets, thinly sliced
- 2 Calypso mangoes, peeled, cut into thin wedges
- 1 red onion, cut into thin wedges
- 1 bunch fresh mint, leaves torn or shredded
- 1/2 cup (130g) natural yoghurt
- 2 tablespoons chopped fresh coriander, plus extra to serve
- 1 tablespoon sweet chilli sauce
- 2 tablespoons fresh lime juice
Method
- Step 1Combine the lettuce, chicken, mango, onion and mint in a large bowl.
- Step 2Combine the yoghurt, coriander, chilli sauce and lime juice.
- Step 3Divide the salad among serving bowls. Drizzle with a little dressing and scatter over extra coriander leaves. Serve immediately with extra dressing on the side.
