This has most of the crunch and all the flavour of fried schnitzel, in a fraction of the time. The secret is using mayonnaise to make the panko stick to the veal – plus it adds flavour.
Ingredients
- 600g baby potatoes
- 4 (120g each) uncrumbed veal schnitzel
- 1 teaspoon mustard powder
- 3 teaspoons whole-egg mayonnaise
- 3/4 cup panko breadcrumbs
- 1 tablespoon extra virgin olive oil
- 30g butter, softened
- 3 tomatoes, cut into wedges
- 1 tablespoon chopped fresh flat-leaf parsley, to serve
Method
- Step 1Cook potatoes in a large saucepan of boiling water for 5 to 8 minutes or until just tender. Drain. Cover to keep warm.
- Step 2Meanwhile, preheat grill on high and place shelf 15cm from grill. Place a lightly greased wire rack on a baking tray.
- Step 3Place veal on a flat surface. Cover with plastic wrap. Using a rolling pin, pound each piece of veal about 5 times to soften (see note). Place on prepared rack. Season. Sprinkle one side of each piece of veal evenly with mustard powder then spread with mayonnaise. Top with breadcrumbs, pressing to secure.
- Step 4Drizzle with oil. Grill for 5 to 7 minutes or until light golden and veal is just cooked through (see note).
- Step 5Gently crush potatoes with a fork. Dot with butter. Serve veal with potatoes and tomato, sprinkled with parsley.

Notes
The veal shouldn’t be any thinner than 5mm otherwise it will overcook.
The key to this recipe is fast grilling. You want the panko to get to light golden in 7 minutes or less – any longer and the veal will be cooked beyond being perfectly juicy and tender.
