With crisp vegies and tender beef coated in golden sesame seeds, this is the upper crust of stir-fries!
Ingredients
- 2 beef scotch fillet steaks, fat trimmed, thinly sliced
- 55g (1/3 cup) sesame seeds
- 2 tablespoons peanut oil
- 450g thin hokkien noodles
- 2 tablespoons salt-reduced soy sauce
- 2 tablespoons dry sherry
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 garlic clove, thinly sliced
- 3cm-piece fresh ginger, peeled, cut into matchsticks
- 1 teaspoon bought minced chilli
- 1/2 red capsicum, deseeded, thinly sliced
- 1/2 yellow capsicum, deseeded, thinly sliced
- 100g button mushrooms, thinly sliced
- 1 bunch broccolini, trimmed
- 100g sugar snap peas, trimmed, halved lengthways
Method
- Step 1Press both sides of the beef into the sesame seeds to coat. Heat 3 teaspoons of oil in a wok or large deep frying pan over medium heat. Cook half the beef for 1 minute each side or until golden. Transfer to a plate and cover with foil. Repeat with another 3 teaspoons of oil and remaining beef. Wipe the wok clean.
- Step 2Place the noodles in a large heatproof bowl. Cover with boiling water. Set aside for 2 minutes to soak. Drain.
- Step 3Meanwhile, combine the soy sauce, sherry, oyster sauce and brown sugar in a small bowl.
- Step 4Heat the remaining oil in the wok over medium-high heat. Stir-fry the garlic, ginger, chilli, combined capsicum, mushroom and broccolini stems for 2 minutes. Add the soy sauce mixture, sugar snap pea and remaining broccolini. Bring to the boil and cook for 2 minutes or until the sauce thickens slightly.
- Step 5Add the noodles and beef to the vegetable mixture. Toss to combine.

Notes
Cook’s tip: If you want to make this recipe gluten free, swap the hokkien noodles for rice noodles and cook following packet directions. Make sure you use gluten-free soy and oyster sauces.
With a twist: Sesame seed crusted pork with rice: Omit the noodles. Replace the beef with 1 pork fillet. Swap the broccolini for gai lan (Chinese broccoli). Serve with steamed rice.
