Ingredients
- 1 3/4 cups caster sugar
- 1/3 cup orange juice
- 1/3 cup honey
- 1 1/4 cups sesame seeds
Method
- Step 1Grease a 26cm x 32cm (base) Swiss roll pan.
- Step 2Combine sugar, orange juice and honey in a saucepan over low heat. Cook, stirring, for 2 to 3 minutes or until sugar dissolves. Increase heat to medium-high. Bring to the boil. Boil, without stirring, for 8 to 10 minutes or until mixture reaches 116°C on a candy thermometer or when mixture forms a soft ball when a small amount is dropped in cold water.
- Step 3Remove from heat. Stand for 30 seconds to allow bubbles to subside. Stir in sesame seeds. Return to heat. Boil, without stirring, for 8 to 10 minutes or until mixture reaches 138°C on a candy thermometer or when mixture forms a thread when a small amount is dropped in cold water and can be snapped with your fingers. Remove from heat. Stand for 30 seconds to allow bubbles to subside.
- Step 4Pour mixture into prepared pan. Stand for 10 minutes. Using a knife, score brittle into 48 triangles. Cool completely in pan. Snap into triangles. Serve.
