Ward off midweek madness by dishing up this meal for a delicious dinner.
Ingredients
- 1/4 cup Alfa One rice bran oil
- 1 large brown onion, thinly sliced
- 4 (150g each) crumbed beef schnitzels
- 430g loaf Turkish bread
- 1/3 cup tomato relish
- 1/4 cup whole-egg mayonnaise
- 8 butter lettuce leaves
- 2 small tomatoes, thinly sliced
- 4 slices vintage cheddar cheese
Method
- Step 1Heat 1 tablespoon oil in a large frying pan over high heat. Cook onion, stirring, for 4 to 5 minutes or until softened. Transfer to a plate.
- Step 2Heat remaining oil in pan over medium-high heat. Cook schnitzels for 2 minutes each side for medium or until cooked to your liking. Transfer to a plate line with paper towel.
- Step 3Meanwhile, cut bread into quarters. Split each piece in half. Toast until golden. Spread half the toast pieces with relish. Spread remaining pieces with mayonnaise. Place mayonnaise-topped pieces on plates. Top each with lettuce, tomato, schnitzel, onion and cheese. Sandwich with relish-topped toast. Cut in half. Serve.
