Keep tomato sauce handy for creating instant toddler ‘happy meals’.
Ingredients
- 75g lean beef mince
- 3 thawed tomato sauce cubes (see below)
- 1 small (60g) chat potato, peeled, finely diced and blanched
- 1/4 cup grated vegetables (carrot and zucchini)
Tomato sauce (2 cups)
- 3 large (600g) tomatoes
- 2 teaspoons olive oil
- 1 small brown onion, chopped
- 2 tablespoons salt-reduced tomato paste

- You'll need two 1 cup-capacity ice-cube trays
Method
- Step 1To make sauce: Make a shallow cross in the bottom of each tomato. Transfer to a large, heatproof bowl. Cover with boiling water. Stand for 1 minute or until skin begins to soften. Refresh under cold water. Using a small, sharp knife, remove and discard skin. Roughly chop tomato. Heat oil in a large saucepan over medium heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add chopped tomatoes and tomato paste. Cook, stirring occasionally, for 20 minutes or until slightly thickened. Set aside to cool for 15 minutes. Process tomato mixture until smooth. Transfer to a jug. Pour into ice-cube trays. Cover with plastic wrap. Freeze overnight or until firm.
- Step 2Spray a small frying pan with olive oil spray. Heat pan over medium heat. Add beef mince. Cook mince, breaking up with a wooden spoon, for 4 to 5 minutes or until browned and just cooked through. Add 3 thawed tomato sauce cubes and chat potato. Cook, stirring occasionally, for 3 minutes or until potato is tender. Add carrot and zucchini. Cook, stirring occasionally, for 3 minutes or until tender. Serve.

Notes
Serves 1 toddler.
Freezing tips for the sauce: To defrost: Defrost required number of cubes of sauce in the fridge overnight.
To reheat: Place defrosted cubes in a small saucepan over low heat. Cook, stirring constantly, for 1 to 2 minutes or until heated through.
