Just six ingredients is all you need for this speedy, budget-friendly dinner!
Ingredients
- 4 (240g) roma tomatoes
- 1 tablespoon olive oil
- 8 (750g) thick pork sausages
- 2 medium brown onions, cut into thin wedges
- 3 garlic cloves, crushed
- 425g can baked beans in rich tomato sauce
Method
- Step 1Using a small knife, cut a cross in the base of each tomato. Place tomatoes in a heatproof bowl. Cover with boiling water. Stand for 1 minute. Drain. Carefully peel and discard skins. Roughly chop tomatoes.
- Step 2Heat oil in a large saucepan over medium-high heat. Cook sausages, turning, for 8 minutes or until light golden. Transfer to a plate. Add onions to pan. Cook, stirring, for 3 to 4 minutes or until softened. Add garlic and tomato. Cook, stirring occasionally, for 5 minutes, or until tomato has softened and started to collapse.
- Step 3Return sausages to pan. Add baked beans. Cover. Bring to the boil. Reduce heat to low. Simmer for 5 minutes or until sausages are cooked through. Season with pepper.
