Ingredients
- 500g beef sausages
- Olive oil spray
- 600g chat potatoes, halved
- 150g semi-dried tomatoes, chopped
- 100g rocket leaves
- 1 tablespoon extra virgin olive oil
Method
- Step 1Preheat a non-stick frying pan over medium-high heat. Spray sausages with oil. Cook, turning occasionally, for 10 to 15 minutes or until cooked through. Set aside to cool slightly. Slice diagonally.
- Step 2Cook potatoes in a large saucepan of boiling salted water for 10 minutes or until tender. Drain. Place into a bowl and allow to cool slightly.
- Step 3Add tomatoes, sausages and rocket to potatoes. Drizzle with oil. Season with salt and pepper. Toss. Serve.
